Executive Chef Maverick Cuthbert

Above is Maverick in his chef whites for the Australian 2020 “Nestle Professional Chef of the Year Competition” which he recently won in the Western Australia Cook-off in July. Now he will represent WA in October in the finals, below are photos of the dish he made, which the judges gave a 19 out of a possible 20 points, meaning he scored a perfect 10 out of 10 by 1 judge, and a 9 out of 10 from the other judge.  Maverick has just been informed this week that he has been nominated for the 2020 WA Restaurant & Catering awards for their “Chef of the Year”, so 2020 is turning out to be a very good year for him!

“I made a dulcey blonde mousse dome with a raspberry gel insert, which I spray painted with 70% nestle chocolate. Then I graffiti splashed a mix of orange, blue, red, pink and white food colouring, then placing the dome on a round shortcrust biscuit I made, with a warm coconut and BlackBerry financier, which I complemented with a coconut dressing, split with a green Geraldton wax oil.  I then made a refreshing strawberry and mandarin sorbet, which I placed on top of a macadamia nut and semolina crumb, and finished it off with a lemon curd and Chantilly cream with a fresh raspberry and brown butter tuile”
